Product and category URL keys carry over as Vendor slugs, and meta titles and descriptions come across with the products. Where Magento's URLs differ from Vendor's, for example category paths or .html suffixes, we plan redirects as part of the switch-over.
Customer accounts come across with names, emails, addresses and customer groups. The Magento API doesn't expose passwords, so customers set a new one the first time they sign in. Past orders aren't part of the standard import; if you need them, we plan it separately.
